Sakaba Omakase

Inspired by Japan. Rooted in Zeeland. Entirely Sakaba.

Sakaba Omakase is the signature dining experience of Atelier Paul Morel — an intimate journey where food, drinks and hospitality come together around one table.

Limited to just 8–12 guests per service, Sakaba moves beyond traditional omakase, embracing a more vibrant and expressive interpretation shaped by Japanese influences, the North Sea, seasonality and contemporary hospitality.

Together with Luigi Pauletto, right hand of Chef Yoshi from Sakas Gent, each experience unfolds through live cooking, carefully curated dishes and a constant dialogue between kitchen, bar and guest.

Alongside the food, guests are personally guided by Paul Morel through a Japanese-inspired beverage programme featuring tailor-made cocktails, premium sake, exceptional wines and rare discoveries sourced from some of the most exciting producers available today.

Energetic. Refined. Deeply personal.

A place where every detail matters and every experience evolves with the season.

Sakaba Omakase Privé

Custom. Personal. Intimate.

Alongside our scheduled experiences, Sakaba is available as a private concept inside Atelier Paul Morel.

Whether celebrating a special occasion, hosting clients, gathering friends around the table or creating an unforgettable evening with family, each Private Sakaba is developed in close dialogue with the host.

Built around the same philosophy that defines Sakaba Omakase, every experience is tailored around the occasion, the guests and the atmosphere you wish to create. Exceptional products, remarkable drinks, unique bottles and bespoke elements can all be incorporated to create something truly memorable.

Available from 8 guests onwards.

Sakaba Privé is available upon request and can be organised on a mutually agreed date, subject to availability and the requirements of the experience.

An intimate omakase-inspired experience where food, drinks and hospitality come together in their most personal form.
