Dark n Stormy

lime & ginger granita 

This recipe serves 4 cocktails.

Bacardi Ocho Rum 200 ml
Sugarwater 1:2 40 ml
Fresh lime Juice 80 ml
Premium Gingerbeer 100 ml
  • Press the lime juice and fine strain through a sieve

  • Combine all ingredients and store cold

Lime Granita

This granita serves 10 drinks

Bacardi Carta Blanca 100 gr
Triple sec 20 gr
Sugarwater 1:2 90 gr
Fresh Lime Juice 100 gr
  • Combine all ingredients in a Tupperware

  • Put in the freezer for 12 hours till completely frozen

  • Whisk the granita twice during these 12 hours for a perfect texture

  • Loosen the granita with a spoon before usage

GInger Granita

This granita serves 10 drinks

Premium Gingerbeer 250 gr
Still water 50 gr
Sugarwater 1:2 25 gr
Fresh lime juice 35 gr
Freshly pressed beet juice 10 gr
  • Press the lime juice and fine strain through a sieve

  • Combine all ingredients in a Tupperware

  • Put in the freezer for 12 hours till completely frozen

  • Whisk the granita twice during these 12 hours for a perfect texture

  • Loosen the granita with a spoon before usage

Perfect serve

  • Shake the Dark n Stormy shortly till cold

  • Combine 30 gram ginger granita and 30 gram of lime granita in a tumbler glass

  • Add kaffir lime zest and decorate with a lime leaf

  • Per drink serve 100 ml ice-cold and shaken Dark n Stormy cocktail over the granita
